Braised Red Cabbage with Bramley Apples

This is my classic braised red cabbage with the added twist of Bramley apples. It’s not the fanciest recipe in the world but it’s a Christmas table staple! This sweet, tangy and spiced dish pairs perfectly with our Cauliflower Cheese and Spinach, cranberry and olive stuffing swirl!

Braised red cabbage with Bramley apples
Serves 10-12 as a side

Ingredients:
1 red cabbage, thinly sliced
2 onions, thinly sliced
2 cooking apples, peeled and cut into matchsticks
1 garlic, crushed
1/4 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
4 tbsp maple syrup
3 tbsp apple cider vinegar
2 tbsp olive oil
1 tbsp salt

Method:

  1. Start by thinly slicing the red cabbage and onion and chopping the apple into match sticks.

  2. Add into a casserole dish with a lid or a baking tray that can be sealed with tin foil.

  3. Add apple cider vinegar, olive oil, maple syrup, nutmeg, cinnamon, cloves and garlic into a small dish and mix until smooth.

  4. Add this mixture into the casserole dish with the cabbage and mix through.

  5. Add the lid or seal tightly with tin foil.

  6. Cook for 1.5 hours at 180 degrees until the cabbage its soft and deepens in colour.

  7. Serve alongside your favourite sides on your Christmas table! We recommend our Cauliflower Cheese and our Spinach, cranberry and olive stuffing swirl!
