CHARLIE’S STORY
I wanted to share my learnings with others seeking inspiration to get into plant based eating.
Growing up I had an awareness of where food came from and a built-in distaste for meat. I have been a vegetarian since I was about 5 years old.
In 2013 I finally ditched the dairy and started my plant-based journey. As a massive cheese addict this was a particularly difficult move for me and often found myself caving for the familiar comfort of melty mozzarella or mature cheddar. I needed to work out a way to make plant-based cheese, surely it was possible!
Back then I found myself making a lot of bad food decisions. I struggled for inspiration and so most of my meals were carb heavy with veggies as an add on. I needed to change how I cooked, making veggies the focus of my dishes.
It was at this time that I fell in love with the magic of fermentation. I began to think, perhaps this was the way to create my plant-based cheese I had be dreaming of. I was determined to create a great tasting cultured plant-based cheese that was made from whole foods with very little ingredients in and no preservatives. And that’s exactly what I did! A couple years down the line, Wild Root cheese was born! Since then I have acquired 85% of The Fermentation Station which is now the proud maker of our cheese as well as many other yummy products!
From there, Wild Root has grown into a café, deli and event space in rural Halsall. Halsall is where I grew up and went to school as a child and so it has been so magical to reconnect to the community I grew up in and introduce Tom, my partner and our daughters Mabel and Ophelia to the Wild Root family. What started out as my dream has grown into a family effort and a team of wonderful people making healthy plant-based food by hand for you to enjoy.
Plants are at the centre of everything we do here! Our cafe and deli offer a wide range of homemade meals with plants at the centre of every dish, no junk, no nasty fillers! We are determined to bring plant-based eating back to plants, putting vegetables in the centre of each plate!
