5-a-Day Kimchi Fried Rice

With a zingy dressing of chilli, ginger, garlic, lime, and tamari, plus our signature kimchi stirred in at the end for that irresistible tang, this is a midweek meal that’s as gut-friendly as it is satisfying.

5-a-Day Kimchi Fried Rice
serves 3

Ingredients:
1 cup of brown rice
4 spring onion, sliced - green ends saved for garnish
1/2 cabbage, sliced
1 red pepper, sliced
2 carrot, peeled into ribbons
sugar snap peas, whole
1/2 chilli, sliced
1 knob of ginger, grated
2 clove of garlic, crushed
2 tbsp olive oil for frying
3 tbsp The Fermentation Station Kimchi

For Dressing:
juice from 1 lime
1 tbsp tamari
1 tsp sesame oil
1/2tsp maple syrup
1 tsp brown rice vinegar

To Garnish:
the greens of your spring onions
coriander
sesame seeds

Method:

  1. Start by getting your rice on the boil and cook per the packet instructions. You can use pre-cooked packet rice here if you prefer - so you can skip this step.

  2. Heat a large frying pan or wok and add garlic, ginger and chilli into a pan and fry for 2-3 mins. Then add the spring onions whites (making sure to save a handful for garnish) and fry for a further 1 minute.

  3. Now add the sliced red pepper, cabbage, carrot ribbons, sugar snap peas, to the pan and cover with a lid and let this steam for 5 minutes.

  4. Meanwhile, it’s time to create your dressing! Grab a small jug and add the lime juice, tamari, sesame, maple syrup and brown rice vinegar into the jug. Stir until combined.

  5. Once the veg has cooked, add in the drained boiled rice and stir until combined. Fry this for a 5 mins to remove any moisture from the rice.

  6. Now add in 3 heaped forkfuls of The Fermentation Station Kimchi and stir again.

  7. Time to serve! Plate up into 3 bowls and top with the left over spring onions, fresh coriander and sesame seeds and enjoy!
